Cuts & Wines is a brand-new project, born out of a passion for BBQ and WINES. At the heart of this new venture is

Johannes Goller,  a trained master butcher.  

Johannes Goller  successfully  ran  Cocoon Ibiza for the past twenty years. During this time at the helm of one of Ibiza’s most iconic parties, Johannes build an authentic network within the hospitality industry. Now, two decades later, Johannes is coming full circle, reconnecting with his roots - which lend an authenticity and culinary quality to Cuts & Wines unparalleled in the Balearics.

Born into a fourth-generation family of master butchers, Johannes took in the kind of knowledge and heritage that today helps him find the finest cuts from Ibiza’s best meat suppliers – the fact that Spain is nowadays known to produce the world’s best meat is not considered irony but destiny. 

Johanne’s grandfather taught him how judge the quality of meat by mere touch of the animal. This  skill and attention to detail is exactly what Cuts & Wines is all about. Johannes  systematically  travels from butcher to butcher,  methodically  hand-picking the best Cuts for a bespoke BBQ at your villa or home. Cuts & Wines can be tailored to parties of all sizes.

And what better to accompany a perfectly grilled steak than really good glass of wine? Cuts & Wines offer an exclusive  selection of out standing organic Argentinian wines from the Bodega Ojo de Aqua / Mendoza by Dieter Meier. These include: Puro Torrentes (white), Puro Rose, Puro Malbec and Puro Cort D’Oro (a blend). 

Cuts & Wines is proud to present the new star of Ibiza premium organic red wines: OJO De IBIZA - Terrazas del Norte - 100% made in Ibiza of course.

Meeting Dieter Meier from Yello and receiving an invitation to his vineyard in the north of the island It was pure chance and really opened up the world of wine to Johannes. Within hours of the meeting, Johannes knew that his life would change direction. 

Cuts & Wines isn’t a restaurant with a fixed abode, it is a service and an ethos for hospitality that Johannes has honed over a long time.  “Yes, it is an experience,” he nods.

“What is important to remember, is that I am a butcher that likes to grill, I am not a trained chef. I am not promising the perfect tomato salad. It’s the best meat in Ibiza, cooked to perfection.”
